Although there are aspects of speculative gamble, for a currency to start off there must be a risk, the sooner crypto is government backed the better

"Government-backed" crypto? That's an oxymoron, a contradiction in terms. The entire premise of cryptocurrency was to be decentralized, outside of state control. What you're describing sounds suspiciously like a Central Bank Digital Currency (CBDC), which is precisely what governments are exploring to *regain* control, not empower some speculative asset.
The volatility of existing cryptocurrencies makes them "unsuitable as a unit of account, means of payment and store of value"[1]. And even CBDCs introduce their own instability risks for monetary policy[2]. You want government backing? You'll get government control, and a digital currency that will likely exhibit the same fragility as its private counterparts, only with more surveillance.
